Vegetable Bombay Biryani

Biryani Masala

Ingredients:

 1 cup Long Grain Basmati Rice
 2 pinches Saffron (Kesar) Strands
 2 Onions, Sliced
 2 tbsp Broken Cashew Nuts (Kaju)
 2 tbsp Raisins (Kismis)
 3 Tomatoes (Finely Chopped)
 2 Capsicums, Sliced
 1 ½ cups Mixed Vegetables
 23 tbsp Hung Curd
 3 tbsp Milk
 4 tbsp Salt Free Butter Or Ghee
 1 pt Flower Brand Biryani Masala

Procedure:

Soak the rice for 20 minutes.

Take mixed vegetables of your choice and boil the vegetables

Boil the rice. Each grain of the cooked rice should be separate. Drain and cool

Heat the saffron in a small vessel, add a little milk and rub until it dissolves

Add the liquid saffron to the cooked rice. Mix well

Heat Butter or Ghee and fry cashew nuts and raisins in it for a few seconds. Remove cashew nuts and raisins and keep aside for garnishing. In the same Butter or Ghee fry onions until brown. Remove the onions.

In the same Butter or Ghee add tomatoes & capsicum and fry for 2 to 3 minutes and add the boiled vegetables. Add Biryani Masala and stir again for 3 to 4 minutes. When it cools down add the hung curd and keep it again for 10 minutes.

How to proceed

Apply 2 tablespoons of Butter or Ghee at the bottom of a microwave-safe bowl. Make layers of rice and vegetables, beginning and ending with rice.

Cover and heat in the microwave for 3 to 5 minutes.

Tips

Just before serving, turn upside down on a serving plate, and garnish with fried onions, cashew nuts, and raisins.
